Monggo

Twelve days ago before my son’s birthday party started, kids planted monggo seeds on this cup, using water, cotton and monggo seeds. It is one of their activities in school and this is the result after four days.


…after 7 days


…and on the 8th day, monggo plant withered. 

And because of this project, my son doesn't like to eat monggo because it will grow on his tummy daw. Hehehe!

Oreo Cheesecake

I wanted to make blueberry cheesecake but I don’t have blueberry at home so I check the internet for possible recipes with cheesecake but I did not get anything I like so I used the recipe of no-bake blueberry cheesecake, I just change some of the ingredients.



Crust:
1 1/2 cups oreo cookie crumbs
1/2 cup (approx. 100g) softened butter

Cheesecake filling:
1 cup (1 brick) cream cheese
1 cup (1 brick) all purpose cream
1/2 cup sugar
3 tablespoons liquid milk
1 tablespoon unflavored gelatin (1 sachet of Knox)
Few pieces of chopped oreo cookies

To prepare crust:
Mix oreo cookie crumbs and add butter to bind. Mash well.
*Crust mixture should be close to texture of moist sand; add a bit more butter if too dry.
Transfer and press evenly on bottom of ungreased springform pan (or any pie dish you prefer).
Place in the freezer to harden crust while you make the filling.

To prepare filling:
Using a mixer, whip chilled cream with 2 tablespoon sugar until stiff. Set aside.
In a separate bowl, gradually mix remaining sugar into softened cream cheese. Beat until fluffy and set aside.
In a small sauce pan, combine milk and gelatine powder. Heat until completely dissolved (don't boil, use a wire whisk while heating to remove lumps). Remove from heat, pour and beat into cream cheese mixture.
Fold in cheese mixture to the whipped cream and beat on medium to high.
Add few pieces of chopped oreo cookie.

To assemble:
Bring out pan from freezer and pour in the cheesecake filling. Spread evenly with spatula and tap pan lightly to set and release some air bubbles.
Cover pan and chill for a few hours.

It was a sure hit to my son but hubby and I still prefer the no-bake blueberry cheesecake because eating oreo cheesecake is like eating cookies and cream ice cream. Hehe!

Caramia: Sansrival

We trooped to Alabang Town Center last weekend because I need to buy some baking supplies in Gourdos. It was my first time visiting the store and it wasn’t easy locating it. Gourdos has two stores in ATC, one in Homezone and one in Entertainment Complex. I visited the two stores to check the difference and I prefer the Entertainment Complex branch because it is much bigger.

Then we had an early lunch at Amici and ordered our old time favorite Spaghetti Al Carbonara and Pollo Arrostito but for a change, we order Sansrival cake instead of Sansrival gelato. We all love it and I think I can finish half of the whole cake and as of this writing, I’m craving for Sansrival how I wish I know how to make this.

Bread Pudding

I’ve read the bread pudding post of “The Harassed Mom’s Food Journey” last Friday so yesterday; I’ve made my very first bread pudding. I dislike leftover so if I have time I make French toast using our old bread but for a change I tried different recipe. I got the recipe from Mom Who Think site. 
  
2 cups whole milk (or 2 cups half & half)
1/4 cup butter
2/3 cup brown sugar (light or dark, depending on taste preference)
3 eggs
2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 cups bread, torn into small pieces (french bread works best)
1/2 cup raisins (optional)

1. In medium saucepan, over medium heat, heat milk (or half & half) just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.
2. Combine sugar, eggs, cinnamon, nutmeg, and vanilla. Beat with an electric mixer at medium speed for 1 minute. Slowly add milk mixture.
3. Place bread in a lightly greased 1 1/2 quart casserole.
4. Sprinkle with raisins if desired. Pour batter on top of bread.
5. Bake at 350 degrees F for 45 to 50 minutes or until set. Serve warm.

While making my bread pudding my son joined me so I gave him all the sides of the bread to keep him busy.


I have few pieces of old bread so I increase the measurement of the ingredients but I guess I miscalculated the measurement because my bread pudding wasn’t that successful.



It is crunchy on the top but too soft and wet at the bottom. Nevertheless, my boys love this or maybe because they eat anything I serve.

4th Birthday

If you’ve been reading this blog for quite some time now, you know that I’m not a fan of parties but since this is my son’s first school experience, I decided to celebrate his birthday in school. My son has only 13 classmates so this is really a simple celebration. I started the preparation three weeks before the event so it would be less stressful for me.

I was worried the day before my son’s birthday because we went to school only to find out the class was suspended (Typhoon Marce). I was really praying hard that there would be no class suspension on his birthday and God is indeed good because He gave us good weather. I realized that maybe he suspended the class so I had more time to prepare.

Vanilla Cupcake + Vanilla Buttercream Frosting Recipe

Yesterday was my son’s 4th birthday party in school and I baked choco-banana cupcake and vanilla cupcake. My initial plan was to buy cake but I realized that it would be easy for the kids to bring home the cupcake after eating their meal.

I baked the cupcake day before the party and I made the vanilla buttercream frosting few hours before the party. I got this recipe from Brown Eyed Baker site. 

1½ cups all-purpose flour
1 cup granulated sugar
1½ teaspoons baking powder
½ teaspoon table salt
8 tablespoons unsalted butter (1 stick), room temperature
½ cup sour cream
1 large egg , room temperature
2 large egg yolks , room temperature
1½ teaspoons vanilla extract

1. Adjust oven rack to middle position; heat oven to 350 degrees F. Line standard muffin/cupcake tin with paper or foil liners.

2. Whisk together flour, sugar, baking powder, and salt in bowl of standing mixer fitted with paddle attachment. Add butter, sour cream, egg and egg yolks, and vanilla; beat at medium speed until smooth and satiny, about 30 seconds. Scrape down sides of bowl with rubber spatula and mix by hand until smooth and no flour pockets remain.

3. Divide batter evenly among cups of prepared tin. Bake until cupcake tops are pale gold and toothpick or skewer inserted into center comes out clean, 20 to 24 minutes. Remove the cupcakes from tin and transfer to wire rack; cool cupcakes to room temperature before frosting.

Vanilla Buttercream Frosting

1 cup (8 ounces) unsalted butter, at room temperature
2½ cups powdered sugar
1 tablespoon vanilla extract

1. Using the wire whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.

2. Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, mixing until incorporated. Whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed.

My son loves the vanilla cupcake and he keeps on eating my cupcake while I’m waiting for the other batches to finish so I ended up baking more.



It was my first time to decorate a cupcake and I thought it was easy but it wasn’t. I need more practice, but at least I did it, I’m still happy with the result. Hehe!

DIY Car’s Birthday Party Theme

I’m not fond of big parties, so we don’t throw birthday parties; instead, we just travel. I decided to celebrate my son’s 4th birthday in school this time. I dislike preparation because I find it stressful but since my son has only 13 classmates it would not be difficult to prepare. Anyway, it is just a simple party, less than an hour celebration. All we need is an invitation, guestbook, giveaways, and of course food.


My son loves “Lightning Mcqueen” so Car was our theme. Three weeks before my son’s birthday I started the preparation. I got this invitation from Toy Kingdom, P60 for 6 pieces. I personally wrote all the details.


I bought picture frame and stamp pad for the guestbook. I added some car’s picture.
I decided not to have loot bags because not all kids eat candies just like my son so I just bought small Pringles as a giveaway.


I used red cartolina, double sided tape, printed car’s theme and glue.


I also bought bottled water for the drinks because soda and chocolate drinks are not allowed in school. I used red and black cartolina, double-sided tape, printed car’s theme, and glue.

Camaron Rebosado Recipe

I wanted to cook shrimp tempura but looking at the procedures it makes me so lazy so I ended up cooking camaron rebosado. I don’t normally measure my ingredients so season your shrimp according to your taste. This is my version of camaron rebosado. I used the F.E.B. (Flour, Egg, and Breadcrumbs) procedure.

½ kilo of shrimp (shelled and deveined)
1 lemon
8 tbsp of flour
Salt, pepper, cayenne pepper, and garlic powder
2 Raw eggs
Breadcrumbs
Cooking oil for deep frying

Marinate the shrimp in lemon juice for 30 minutes. Heat a pan and pour in the cooking oil. Combine flour, salt, pepper, cayenne pepper, and garlic powder. Beat the eggs. Put the shrimp in flour mixture, then egg, and lastly breadcrumbs. Then deep-fry until the color turns to golden brown.


Update: August 2021 Purefoods Tail-on Shrimp

I love shrimp but I seldom cook Camaron Rebosado or Shrimp Tempura because it needs a lot of cooking oil. I can’t even remember the last time I cooked this at home but I love eating this if this is available on the buffet table. 


Anyway, just this year I discovered that Purefoods has Seafoods Delight Tail-on Shrimp so I ordered this online.  What is nice about this product is you don’t need to thaw and no more cooking oil, you can toast it on your oven toaster for 15 minutes. But if you don’t have an oven toaster, you can also deep fry it. 

Oven Toaster 

1. Take out from the freezer. No need to thaw. 
2. Oven toast for 15 minutes. (cooking may vary depending on cooking wattage) 
3. Serve Crunchy 

Deep Fry 

1. Take out from the freezer. No need to thaw. 
2. Deep fry for 2 to 3 minutes on medium heat or until golden brown. 
3. Remove from pan and drain excess oil. 
4. Serve while hot. 

But since I have an air fryer, I use my Philips HD9270 Air Fryer to cook this Tail-on Shrimp. The same process with the oven toaster but I only cook this for 8-10 minutes at 190C. It turned out really crunchy compared to my Camaron Rebosado from scratch. 




With regard to taste, it is just okay. I just find it a little bit salty for my taste kung pang appetizer pero okay naman kung may rice. I still have another pack, let see kung mabago lasa sa next na luto. Hehehe!

Chocolate Chip Pancake Recipe

We had a dining table make-over just this week. I wanted to bake something but I can’t because we have no table for the last three days.  It is really hard to cook meals because of the limited space in our kitchen so I was not able to try a new recipe.


The only thing I’ve tried this week is chocolate chip pancake, I always use Maya Instant Hotcake mix. I always follow the recipe on the box then I will just add the chocolate chips if I want too. Here is the recipe for Maya Original Hotcake Mix.


You will need 

1 medium-sized egg
2 tablespoons oil 3/4 cup water
1 pack Maya hotcake mix 250g
Optional: chocolate chips

Procedures

1. Mix all ingredients in a bowl until slightly lumpy. (Do not overmix)
2. Pour 2 tablespoons hotcake batter onto preheated, lightly greased pan or flat skillet.
3. Cook until bubbly then turn to cook the other side.

For a change, I tried a new product “Bisquick”. Here are the recipes if you will make classic pancakes or waffles. My son loves this because of the chocolate chips. Hehe!


Classic Pancakes 

You will need 

2 cups Original Bisquick mix
1 cup milk
2 eggs

Procedures 

1. Stir ingredients until blended
2. Pour slightly less than 1/4 cupfuls onto a hot greased griddle
3. Cook until edges are dry. Turn, cook until golden.

For thinner pancakes, increase milk to 1 1/2 cups

The Ultimate Pancake

Just add 2 tsp baking soda, 2 tbsp vegetable oil, 1 tsp vanilla extract, and 3 tbsp sugar.

Waffles 

You will need 

2 cups Original Bisquick mix
2 tbsp vegetable oil
1 1/2 cups milk
1 egg

Procedures 

1. Stir ingredients until blended
2. Pour onto center of the hot greased waffle maker, close lid
3. Bake about 5 min or until steaming stops. Carefully remove waffle.

Optional:

Add 2 tbsp candy sprinkles. (have more fun)
Add 2/3 cup vanilla yogurt (make it moist)
Add 1/4 cup peanut butter (make it nutty)
Add 1 tsp ground cinnamon (just enough spice)
Add 1/2 cup quick-cooking oats (make it hearty)
Add 6 slices of cooked bacon chopped (make it awesome)

Best-Ever Chewy Chocolate Chip Cookies

Few days ago I baked The Best Brownie” and yesterday I tried the “Best-Ever Chewy Chocolate Chip Cookies”. I guess this is one of the most pinned cookie recipe in Pinterest and I’ve read a lot of good reviews so I decided to try the recipe. This is the first chocolate cookie recipe that I’ve tried so I can’t really say if this is the best chocolate chip cookie for me. I guess I’m not a fan of chewy cookie and I prefer crispy chocolate cookie. The cookie turned out soft, moist and chewy.


I’ve got this recipe in “Apple a Day” site.
  
Ingredients:
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips

Directions:
1.  Preheat oven to 350 degrees F.
2.  In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)
5.  Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.  Makes approximately 3 dozen.

Buying Food at Street Fairs


Street fairs and farmers market have become incredibly popular over the last few years.  It seems like every weekend there is a different street fair or market where you can go and buy great things.   In fact, many communities have started regular weekly street fairs and farmers markets that draw large crowds.  Here are some things to think about when buying food at these events.



Support Your Local Community

The great thing about these local markets is that they really support the local community.  These markets are staffed by vendors who usually grow or produce their food locally, and the market may be the main way they sell their produce or other items.   As a result, when you buy from them, not only are you buying locally grown produce (which is very popular now as well), you are also supporting a local business. 


Great Fares!

Many of these markets also offer some great eats!  With the new trend of foodtrucks sweeping the nation, you can find some great gourmet food served out of a van at these fairs and markets!  Many vendors also sell their food, produce, and sauces so that you can take them home and make them yourself in the comfort of your own kitchen. 


The Drawbacks

The biggest drawback of these street fairs and farmers markets is usually the price of what you are going to buy.  Prices at these markets typically tend to be higher than at stores in town, or national chains.  The reason is that these vendors typically don’t benefit from cost savings that large stores benefit from.  The can’t scale well and don’t realize a lot of cost savings as a result.  As such, you as the consumer pay more.

Also, you typically can’t find any discounts, like net voucher codes, which you could find for regular grocery stores or other online shopping.  This also makes the cost of shopping at a farmers market higher than a regular store.

The Best Brownie Recipe

It’s been a year since the last time I baked brownies. I found this recipe from food.com.  I checked the ingredients and procedures and it looks so easy so I tried it yesterday. 

1/2 cup vegetable oil
1 cup sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon baking powder
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup flour

Directions:
1. Preheat oven to 350°.
2. Mix oil and sugar until well blended.
3. Add eggs and vanilla; stir just until blended.
4. Mix all dry ingredients in a separate bowl.
5. Stir dry ingredients into the oil/sugar mixture.
6. Pour into greased 9 x 9 square pan.
7. Bake for 20 minutes or until sides just starts to pull away from the pan.
8. Cool completely before cutting.

I added chocolate chips
This is indeed a simple and easy recipe because I don’t need a mixer to mix all the ingredients and I can make this is less than 30 minutes. We all love the brownies and it is better than my previous recipe. It is so moist, gooey and not overly sweet. The only thing I notice is, it is a little bit oily maybe because I use vegetable oil. Next time I will reduce the oil to 1/3 cup and will see what will happen. One more thing I need to double the recipe because we ate 3/4 of the brownies in one sitting. 

I don't know why it is not smooth on the top. 
Mita's Fudgy Brownies

Last Saturday, I baked Mita’s Fudgy Brownies and I was so delighted because I made it. It was my first time to bake brownies and thank you for this recipe. Click here for the recipe. I planned to add some nuts in the recipe but my hubby bought a garlic flavor nuts but brownies are still yummy even without nuts. It is a little bit sweet so next time I will reduce the sugar to ¾ cup. It doesn’t look good on the picture.

DIY Homemade Play Dough

Two months ago I’ve made my first homemade play dough and this is now the third time that I’ve made this. It seems that every month I’m cooking play dough. My son always reminds me to cook clay if his play dough runs out. I don’t know if it is a good idea that he knows that I can make this. Hehe! Again, I got my recipe from "Musings from a stay-at-home mom". 

Ingredients

1 cup flour
1 cup water
2 teaspoon cream of tartar
1/3 cup salt
1 tablespoon vegetable oil
food coloring

Instructions
Mix flour, cream of tartar and salt. 


Add water and oil


Cook over low/medium heat, stirring.


Once it begins to thicken, add the food coloring.


Continue stirring until the mixture is much thicker and begins to gather around the spoon.


 Remove the dough onto wax paper or a plate to cool. 


I put my play dough in an airtight container for storage.

30 Minute Roll

I’ve been meaning to make my own bread so when I’ve found this 30-minute dinner roll recipe I did not have any second thought and tried it last weekend. Recipe from “Your Homebased Mom” site

1 cup plus 2 Tbsp warm water
1/3 cup oil
2 tbsp yeast
1/4 cup sugar
1 1/2 tsp salt
1 egg
3 1/2 cup bread flour (seems to work better but all-purpose flour will also work)

Heat oven to 400 degrees.
In your mixer bowl combine the water, oil, yeast, and sugar and allow it to rest for 15 minutes.  Using your dough hook, mix in the salt, egg, and flour.  Knead with hook until well incorporated and the dough is soft and smooth. (Just a few minutes)
Form dough into 12 balls and then place in a greased 9 x 13 pan and allow to rest for 10 minutes.  Bake for 10 minutes at 400F degrees or until golden brown.

I don’t know why this is called “30 Minute Roll” because I finished everything in more than 30 minutes and it was not successful because I can’t form dough balls. The dough is really sticky, I don’t know if I need to use flour on my hands to form dough balls. I went back to her site and read some comments and I was not alone. Next time I will put some oil on my hands so I can form dough balls. I found a video and it looks so easy.

But I was having a hard time last weekend so I put the whole dough in the baking dish and increase the baking time. Hehe! The bread was too dense and some parts are not fully baked. It doesn’t look good but it was edible. We spread some butter, cream cheese, and sardines omelet.

Home Office

A few weeks ago my husband asked me if I want to have a vanity dresser and I said no. You may find it weird because I’m a woman and most of the women love to have a vanity dresser but if there is one thing that I really want to have is a home office. Not because I really work at home but I want to have my own space where I can spend my free time.

A nook where I can read magazine and books, surf net and write blog posts, create craft or anything under the sun. It is a combination of library, home office and reader’s nook.

I was reading an article and according to Zimmerman, here are the important things that we need to consider in designing our home office.

Determine our needs – Do we need computers, storage, meeting space or project station?
In our case, we have our own laptops, one for hubby, one for me and one toy laptop for my son so we need at least two spaces for computers. We need storage for papers, mail, bills and a place for the telephone.  A small square table will do in our home office just in case my son needs to do some project or group projects.

Pick a location - It is my dream to convert our guestroom to a home office.

Develop a Plan - I’m saving this photo for my future home office. I want something like this. I’m not sure if I need to hire an interior designer or I could hire someone who can do my own designs with less professional fee. But according to Zimmerman, it is good to hire a professional designer to help you in planning. Some online shops like Office Furniture Express offer free consultancy service. How I wish we also have free consultancy here in the country.

Create a Healthy Environment – this is very important because my son will also use this room so I need to ensure that our future home office would be safe and comfortable for everyone.

Define a Place for Who You Are – I remember when I was still working we are limited to display 3 personal items like a photo frame, pen holder and paperweight. One advantage of having your home office is you can personalize you working space; you can do whatever you want

A house is not complete without furniture. I haven’t seen a home without single furniture. It is one of the important things that homeowners need to consider.
