Oatmeal Chocolate Chip Cookies

Nowadays, I seldom buy baking ingredients because I rarely bake, sayang naman ingredients kapag naexpire lang. All-purpose flour shelf life is only 6 months so lagi na lang may natatapon kapag hindi ko naubos. And because of that, I only buy 2kg or less. 

Anyway, last November my son and his groupmates baked “Chocolate Chip Cookie” in school so I bought some of the ingredients (his share) and since konti lang naman need nila, I still have leftovers so after few months, sinipag ulit ako magbake. 

I used to buy Betty Crocker instant mixes so I have tried baking Oatmeal Cookie and Oatmeal Chocolate Chip Cookie, my two boys like the taste of these cookies. But last year, I started baking Oatmeal Chocolate Chip Cookies from scratch and it was a big hit. We prefer this compared to instant mix cookies. I baked these cookies before we flew to Norway and when I came back hindi ko na makita yung printed recipe ko.



I have Chef RV Manabat Recipe Book but his recipe needs shortening and I don’t have that so I checked Pinterest to look for Oatmeal Chocolate Chip Cookie Recipe. I tried the recipe of Dessert Now Dinner Later and after trying her recipe, save ko na agad for future use. View the full recipe here

Ingredients  

1 cup butter, room temperature  
3/4 cup brown sugar  
3/4 cup granulated sugar  
2 large eggs  
1 tsp vanilla extract  
2 cups all-purpose flour  
2 1/2 cups old-fashioned oats  
1 tsp baking soda  
1/2 tsp salt  
2 cups semi-sweet chocolate chips



I don’t have vanilla extract and brown sugar so I only used white sugar. I also used dark chocolate chips instead of semi-sweet chocolate chips. My oatmeal chocolate chip cookies taste good even though I did not follow all the ingredients. My cookies only lasted for one week, may pagpipigil pa iyan. I notice, medyo light yung color nung cookies baka dahil walang brown sugar and vanilla extract?

Betty Crocker Oatmeal Cookie

It’s been a long time since the last time I baked and sa sobrang tagal, feeling ko nakalimutan ko na gumamit ng oven. According to my blog, 2017 pa yung last bake ko ng bread and hindi ko pa oven, we baked pandesal when we were in Norway.

It was funny because few years ago I took a Bread Making Class and hindi ko pa totally napractice ang bread making skill ko, bigla nasira oven ko. Waah! My husband called the customer service and if I remember it right, we need to pay a minimum of PHP7500 for the service, pwede pa mag-increase if they need to replace something. The problem is the oven thermostat is not working, lahat ng niluluto ko kahit nasa lowest temperature pa, nasusunog.

Of course, I don’t want to pay the fee kasi naman makakabili na ko ng brand new electric oven sa presyo na yun. I decided not to buy oven na lang kasi magdiet ako, less sweets na for me. Nadiet naman kami pero hindi rin nagtagal because we have sweet tooth. I stopped baking pero bumibili naman ko ng cakes and pastries. Hehehe!

Hanggang nasanay na ko na walang oven, I just cook food na hindi need ng oven. But few months ago, my son told me “Mommy, namimiss ko na yung brownies mo. When ka na bibili ng oven?”. We were planning for a kitchen makeover kasi so dun na sana kami magpapalit para isang gastos na lang. But my son misses my brownies so we decided to buy a new gas range. Hindi siya yung dream oven ko pero para sa ikaliligaya ng anak ko, go na lang.

Since last month, I started baking again, I baked my son’s favorite brownies and roast chicken. I tried a new recipe which is Nutella Puff Pastry but I don’t have a nice picture so I will blog about it next time, kapag nakagawa na ulit ako. And yesterday, I baked Oatmeal Cookie.


Betty Crocker Oatmeal Cookie Mix 

Ang nobela ng intro ko, hehehe! I saw this cookie mix na nakasale sa Landmark supermarket, it was only P141.75 so I bought it. I tried other Betty Crocker instant mix na before so I’m sure that this oatmeal cookie will be a hit.

Just like the other Betty Crocker cookie mix, you only need to add few ingredients like 1/2 butter, 1 egg and 1 tbsp of water. Just mix the wet and dry ingredients and bake it for 10-12 minutes at 350F.



My son likes to add chocolate chips but we don’t have stock at home so I just add Freia Chocolate on top of it. I remember, few years ago my son dislike oatmeal cookie but now he loves it, binaon na rin niya maski yung plain oatmeal cookie.


Next time, I will try to bake oatmeal cookie from scratch, I hope it will taste good too. Medyo bitin kasi yung cookie mix (24 pieces). Kasi paglabas pa lang sa oven, kinain na agad ng mag-ama ko. The oatmeal cookie is soft and chewy, kahit galing sa fridge, soft and chewy pa rin siya kapag kinain.

Betty Crocker Chocolate Chip

Ever since I attended the Bread Baking Class, I was looking for a weighing scale, dough scraper, and additional mixing bowls for proofing. I’ve been to Gourdos but I did not find what I needed so I asked my husband if he can accompany me to Dough It All - Mamplasan

We went to Brentville to check the baker’s supply center but the guard told us that it was already closed, last week lang po nagsara, lilipat daw po sa bandang hi-way. Waah! I just found out last month that they have a branch in Laguna then sarado na. 



Since there is also a South supermarket in Brentville, we checked it out para hindi sayang lakad. I saw the Betty Crocker Chocolate Chip cookie mix P148.50, I tried their Oatmeal Chocolate Chip mix last year and we liked it so I tried this chocolate chip mix.

You only need to add two ingredients, 1/2 butter and 1 egg. Mix the three ingredients and bake for 8-10 minutes at 375F. 




The chocolate chip cookie is good, it is a little bit sweet for my taste so I pair it with milk. Between the two instant mixes, I prefer the oatmeal chocolate chip. The only problem with baking cookies is you need to make sure that you will get it on time, I almost forgot the second batch so may burn part sa ilalim, anyway it is still edible. As of this writing, I only have 5 pieces of cookies left since I baked them yesterday.


Betty Crocker Chocolate Chip Cookie Recipe

1 stick (1/2 cup) softened butter
1 egg
I pack of Betty Crocker Chocolate Chip Instant Mix

1. Heat oven to 375F or 350F for a dark or nonstick cookie sheet.
2. Stir cookie mix, softened butter, and egg in a medium bowl until soft dough forms.
3. Drop dough by rounded teaspoonfuls 2 inches apart on an ungreased cookie sheet. 
4. Bake as directed or until edges are light golden brown. Cool 1 minute before removing from cookie sheet. 
5. Cool Completely; store in an airtight container

Share the delight with Chips Delight

I’ve been blogging for four years already but I don’t really go to events because I don’t have much time and the location is always Metro Manila. But last month, I was able to attend Blogapalooza event for the very first time. Thanks to my husband for being my driver and my son for accompanying me in visiting different booths. 

Upon entering One Esplanade, I immediately notice the Chips Delight booth, who wouldn’t notice the Santa Mascot so we immediately fell in line for a photo op. 
Seeing Santa Claus reminds me that Christmas is fast approaching. Have you started your Christmas Gifts list? I just started mine yesterday. 


Writing a gift list is not easy, especially for those people you do not know personally like my husband’s officemates, my son’s teachers, classmates, and friends. So one of my choices is to give food gifts that they will like and appreciate. You can check my christmas gift ideas and homemade gifts ideas.  


This coming holiday, why not share the delight with Chips Delight, #sharethedelight I’ve been buying this cookie for quite some time now. Our family loves chocolate chips so it is always on our grocery list. Chips Delight of Galinco is one of my chocolate chip brands. I buy different chocolate chips kasi madali magsawa anak ko sa baon so dapat paiba-iba din. 

I haven’t tried the other variants but Chips Delight has different flavors and they even have cookie mixes which are perfect for lazy bakers like me. We got a sample, Chips Delight Triple Overload Chocolate Chip Cookies that I haven’t tried because my son ate it all. Glad that I was able to take pictures before he finished everything, di halata na di niya gusto. Hehehe! This one has no baon pack sizes.

Mrs. Fields Cookie Nibblers

After my therapy we went straight to Alabang Town Center to check the LazerXtreme. My husband learned about it from his officemate and when we google it, my son got excited. 

We were so early and ATC was still closed, so we waited for 20 minutes only to find out that the LazerXtreme was already closed. Waah! They no longer operating in ATC. They only have Market Market branch which is far from our place. My son was really disappointed and he wanted to go to Market Market but of course, we can’t do that because I have to attend a webinar at 2PM. 




I remember that Mrs. Fields have one day anniversary treat, August 29, 2015. I alway see their kiosk in ATC but haven’t tried anything. Since it was my first time to try their products, I only bought 1 dozen of cookie nibblers at P76. I tried it and it was good, it taste like Triple Chocolate Cookie of Ghirardelli that we love. It is a perfect match with a glass of milk.  




My son like it too, how I wish I bought a lot so I could take advantage of the P38 promo (half dozen) because I don’t think I will buy these cookie nibblers at a regular price of P150 (1 dozen). The cookie is small, isang kagat lang talaga so I find it expensive. I would rather buy a Mrs. Fields cookie mix and bake it on my own,

Betty Crocker Oatmeal Chocolate Chip

It’s been a while since the last time I baked a cookie. I was checking our cupboard when I saw this Betty Crocker Oatmeal Chocolate Chip. I can’t remember when and where did I buy this instant mix. 

I can bake from scratch but from time to time I buy instant mixes because I’m a lazy baker. Lazy because I don’t want to use a lot of baking stuff in measuring and mixing my ingredients because it means, I have more stuff to wash. 



It was my first time to use this Betty Crocker instant mix and I loved it because it only needs two additional ingredients which are 1/2 softened butter and 1 egg.


I just mixed the three ingredients and scooped it on my baking tray. After 12 minutes, I have my oatmeal chocolate chip. 


I’m not fond of chewy chocolate chips but this time I loved my chewy oatmeal chocolate chips. My son who doesn’t like oatmeal cookie still ate one piece. When my husband went home, he liked it too. Sarap na sarap kaya binaon pa sa office.

Mrs. Fields Sugar Cookies

I just realized that having an advent calendar is not easy because we have to do an activity for 24 days. There are times that we missed doing an activity because we’re too tired already like “watch a favorite Christmas movie”, “record yourself singing a favorite Christmas song” and “bake Christmas cookies”. 

I can’t remember what date is the "baking cookies" but my son wanted to make a Christmas tree cookie so even I was really tired last December 23, we still baked. Good thing I have instant cookie mix which I bought when we had Field trip in Subic



It was my first time to try Mrs. Fields instant cookie mix and I followed the direction but I don’t know why the dough is too runny so I can’t use the cookie cutter and rolling pin. 



I ended up using scoop again to make a cookie but my son wanted to have a Christmas tree cookie so my husband put the dough inside the cookie cutter and I baked it with cookie cutter. Hehehe! 



Well, my son was happy and finished his Christmas tree cookie. Now I was looking for cookie recipe where I can use my cookie cutter and rolling pin.

Nutella Cookie



My husband and son kept on bugging me to bake chocolate chips again. They finished the triple chocolate chips in just two days and they want me to bake again. I’ve run out of instant triple chocolate mix and I have no chocolate chips at home so I bought chocolate chips last weekend but still lazy to bake the best-ever chewy chocolate chips.

I’m too lazy to measure the ingredients but since my husband and son wanted cookie, I just baked Nutella Cookie. It is one of the most pinned pictures in Pinterest. It took me a long time to try this recipe because my Nutella Brownies was not successful. But since I only need three ingredients and no mixer needed I tried it.


I was happy with result and my husband who is not a fan of Nutella liked it too but still prefers chocolate chips. It is best to pair with glass of milk.



Sharing the recipe from Butter Baking site. 

1 cup Nutella (280g, 10 oz)
1 cup plain flour
1 egg

Preheat the oven to 180 C (350 F) and line 2 trays with baking paper.

In a large bowl, mix together the Nutella and the egg. Add the flour and stir until incorporated.

The mixture will be quite thick. Roll teaspoons of dough into balls and place on the lined trays. Using the base of a glass, press each cookie down firmly.

Bake for 6 – 8 minutes. Makes 24 cookies. (I bake it for 10 minutes)

Ghirardelli: Triple Chocolate Cookie

My son was asking for cookie and milk yesterday but we don’t have stock of Oreo at home then I remember the box of ready mix cookie that I also bought. I’ve tried the Triple Chocolate Brownie mix last time and it became an instant hit to my family. I’m expecting the same thing when I’ve tried Triple Chocolate Cookie of Ghirardelli

All I need is an egg, butter and 1 pouch of ready mix. Combine all the ingredients and bake for 11 minutes.


As expected, my son enjoyed his cookie and milk moment. If you still remember my post, I baked best ever chewy chocolate chip cookies before and both have the same taste (IMO), nagkatalo lang kami sa chocolate chips, Ghirardelli chocolate chips is much better. Hehe! 


Now, I really appreciate ready mixes because I can bake something during my lazy moments.

Best-Ever Chewy Chocolate Chip Cookies

Few days ago I baked The Best Brownie” and yesterday I tried the “Best-Ever Chewy Chocolate Chip Cookies”. I guess this is one of the most pinned cookie recipe in Pinterest and I’ve read a lot of good reviews so I decided to try the recipe. This is the first chocolate cookie recipe that I’ve tried so I can’t really say if this is the best chocolate chip cookie for me. I guess I’m not a fan of chewy cookie and I prefer crispy chocolate cookie. The cookie turned out soft, moist and chewy.


I’ve got this recipe in “Apple a Day” site.
  
Ingredients:
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips

Directions:
1.  Preheat oven to 350 degrees F.
2.  In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)
5.  Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.  Makes approximately 3 dozen.

Lemon Crinkle Cookies

I can’t remember the last time I’ve made a cookie, I guess it’s been 4 or 5 years ago when I first tried to make a chocolate crinkle and I can’t even remember the taste. hehe! So yesterday, I’ve pushed myself to bake a cookie, I saw the recipe in Pinterest and one pinner said it is award winning recipe so I pinned and tried it. I checked the ingredients just to make sure I have everything in my pantry and I checked the procedures and it looks so easy.


In less than 30 minutes I have lemon crinkle cookies. I haven’t tasted any lemon crinkle cookies and this was my first time to taste it and I liked it. It is soft, not overly sweet, and I can really taste the lemon. I accepted the fact that my son and husband will not like it because they didn’t like my calamansi cupcake but I was wrong, they love my lemon crinkle cookies.


I’ve got the recipe in LDS Living

Lemon Crinkle Cookies Recipe
Makes 2-3 dozen

Ingredients:
½ cups butter, softened
1 cup granulated sugar
½ teaspoons vanilla extract
1 whole egg
1 teaspoon lemon zest
1 Tablespoon fresh lemon juice
¼ teaspoons salt
¼ teaspoons baking powder
⅛ teaspoons baking soda
1-½ cup all-purpose flour
½ cups powdered sugar

Directions:
Preheat oven to 350 degrees. Grease light colored baking sheets with non-stick cooking spray and set aside.

In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.

Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.


*If using a non-stick darker baking tray, reduce baking time by about 2 minutes.

Danish Butter Cookies and Currant Cookies

Hubby gave us this butter cookie last night. He got this as a prize from his team building. I love the taste of the butter cookie because it is not too sweet. I wonder where I can buy this “Wonderful Copenhagen” Danish butter cookies.

Hubby is back from his Shanghai trip and I am so happy that he brought me a box of cookie. I thought it was a butter cookie but I was wrong. Kjeldsens currant cookie is a little bit sweet with different texture but I still love it except for the currant because I do not like dried grape. Perfect match for hot chocolate drink or coffee. Another favorite from Denmark.
